initially, i was planning to fry kuetiau, but there wasnt any available in coles. I dont usually estimate what i put inside the things i cook but here's what i remember.
Ingredients:
Garlic (i jus flattened it)
Onion (rings)
Dried Chillies (2-3, soaked in water)
2 inches length of Carrot (julienned-cut into strips/shreds)
One piece of chicken thigh fillet (chopped)
5 shelled raw prawns tails on
Beehoon (after soaking in water, shd be around 2 handfuls)
A lot of bean sprouts (i love~)
Chives (i used McCormick's dried chopped ones)

Seasoning:
2 big tablespoons of sambal oelek (i still think its not hot enough)
3 shakes of oyster sauce
Dark soy sauce (pour one quick round the wok for color)
Light soy sauce (2 quick rounds or according to taste)
White pepper
Salt

Heat oil in wok - stir fry chicken - remove from oil - add dried chilli, garlic, onions - stirfry with a little pepper and salt till fragrant - add prawns and carrots - add soaked beehoon - add seasonings one by one - add the beansprouts in the end - stir fry until cooked - serve on plate - garnish with chives.
i still think its not hot enough.
serve dish with chopped red chillies in soy sauce and vinegar.
